Crepes Workshop

Join me for a day in the kitchen you will not soon forget.  After this class you will feel like a professional Creperie.  You will enjoy breakfast, lunch and dinner; 4 servings to be taken home and enjoyed by your family.  So after a fun class, no cooking or dishwashing for you, dinner is ready!  We will start with breakfast crepes, two versions, rich Chocolate Banana and fresh Strawberry with Mascarpone.  We will have some fun making sensational appetizer Crepe Bundles stuffed with brie, apples and caramel. Lunch and Learn Fresh Ideas for Busy Lives

Join me this month or every month for an extended lunch hour and full cooking class experience.  Fresh ideas are sure to become family favorites all with amped up flavor and nutrition.  While we cook we will sample Mango Mimosas just for fun.  We will get started with 2 breakfast ideas; amaze your family with Sunshine Muffins packed with bacon and cheddar and an egg baked right in!  We will prepare irresistible Berry Jam to top those muffins off.   You will look forward to morning when you prepare my Star Studded Oatmeal crammed full of goodness. Chef's Table-Los Cabos

Don’t feel like cooking? Join me for a Chef’s Table lunch and just sit back and enjoy!  I will prepare a beautifully composed meal guaranteed to entice your taste buds. This meal is inspired by some of the phenomenal food we enjoyed seaside in Cabo.  The fun begins with a cocktail I could simply not get enough of and have been dreaming of ever since Grand Mariner Mojito Martini. First course is served upon arrival and consists of Bacon Wrapped Stuffed Piquet Peppers and Chicken Empanadas, sensational little packages of goodness.  We will be seated for the second course of savory Lobster and Corn Crème Brulee.  Third course will be a gorgeous light Collard Salad served with Jalapeno Cheddar Muffins.  The main course will not disappoint, succulent Glazed Pork Loin with Peach and Island Fruit Chutney served over a bed of Pureed Sweet Potatoes.  For dessert, Cherry Hand Pies and a platter of Dark Chocolate Shards, because every meals need a little chocolate!  Fee $59.00

The South Does Bourbon!

Join me for a night out of incredible food and bourbon!  We will taste 3 bourbon varieties paying particular attending to the subtle flavor notes as we gobble delicious bites all with a southern slant.  No matter which corner of the globe you roam, it is impossible to beat Barbequed Shrimp and White Cheddar Grit cups perfect for serving at a party.  We will make our own Herbed Chevre fabulous on its own but we will use it to craft a sensational Panini with creamed honey.  Curry Chicken Salad and Cucumber Canapes make a cool crispy bite.  Grilled Provolone is outstanding when topped with Tomato Jam and balsamic.  Bacon and Chive Biscuits topped with Apricot Glazed Pork is quite possibly the best bite ever!  To round out this exciting evening of food and bourbon we will prepare individual Mixed Berry Cobblers and Sweet Pistachio Cream with Chocolate Shards for dipping.  Class Fee $59.00

Pizza Workshop

Join me for a day in the kitchen you will not soon forget!  Imagine yourself with the skills to prepare fantastic pizzas for your family and friends, perfect for entertaining.  Plus take home a kit including traditional Pizza Sauce and Pizza Crust to create a lovely pizza for your family!  I will show you how to host a Create Your Own Pizza Party, one of my favorite ways to entertain!  We will master the difference between Flatbread and Pizza in this class and the tasty goodness begins with Fontina Flatbread topped with prosciutto, walnuts and shallots.  Next up the show stopping beauty of Assorted Heirloom Tomato Pizza.  We will prepare Green Flatbread, topped with pesto, fresh chevre, kale, chard, basil and chives.    Buffalo Chicken Pizza is sure to be a crowd pleaser along with Salad topped flat bread of Tomato Confit, parmesan, and bacon.  We will prepare the crispy light Cucumber and Fennel Salad perfect alongside any of our savory offerings.  For a sweet treat, Ricotta Honey Berry Pizza sprinkled with Candied Pecans. European Loaf Workshop

 There is nothing like the smell of fresh baked bread coming from of the oven.  Imagine yourself with the skills to prepare European style artisan loaves right in your own home!  You will learn many techniques that go into producing amazing loaves including proper scoring techniques and stenciling for beautiful results.  Each guest will take home 3 loaves, the baguette, batard and boule.  In addition you will prepare a batch of dough from scratch to be finished in your home oven. Class includes churning fresh cultured butter.  We will take a break from the ovens and enjoy our warm bread with a lovely Chopped Salad for lunch.  A pretty great way to spend the day and your friends and family will be delighted by the results! 2 Day French Workshop May 18th and 19th 10:00-2:00

Join Lorie Fangio for a truly unique culinary event.  Immerse yourself in the food and culture of France in this 2 day workshop. In this one time special offering you will learn and prepare two of the French “mother” sauces, two major French doughs and three irresistible French desserts. Laminated Viennoiserie will be demonstrated and enjoyed by the group in the form of croissant and Pain Chocolate. We will dine together for a true French experience including a cheese course and wine each day. French cooking is the gold standard and expertise acquired in this class will last a lifetime. Limited to 10 participants.  Class Fee $189.00. 

Day 1- Using an old fashioned French recipe, we will prepare French Baguettes to be eaten during our class.  We will prepare Pastry Cream as an accoutrement for our breakfast of Ambrosia.  For lunch we will adopt tried and true techniques to guarantee that our Chicken and Mushroom Soufflés rise to amazing heights. We will prepare a Green Salad of roasted beets, goat cheese and Candied Pecans served with a Champagne Vinaigrette. Our dinner portion for the day will be sumptuous Lobster Corn Chowder and for a sweet finish, dreamy Profiteroles stuffed to the brim with cream.

Day 2- Arrive at 9:30 for a demonstration of laminating Viennoiserie, so fun to watch and yields the most amazing Croissantand Pain Chocolate. We will concentrate on sauces today first up Espagnole Sauce to be served with Beef Tenderloin Tournedos and Mushrooms.  Hearty Potatoes Gratin Dauphinoise will be the perfect accompaniment!  Next we will turn our attention to the perfect Béchamel Sauce used to create a lovely dinner of Croque Monsieur, always a crowd pleaser.  A Sable Crust will be created as the foundation of a take home sweet treat, individual Lemon Tarts!  For the perfect finish of our 2 days together we will enjoy Dark Chocolate Raspberry Rose Truffles; sweet, tart and irresistible.

Thursday, May 11th Southern Nights

Join me for an evening of cooking and tasting fun and deep southern flavors.  The festivities began with a cocktail of course; Mint Julep Fizz is one for the record books!  The food begins with an out of this world dip, Baked Goat Cheese topped with Tomato Confit served with Nan bread.  Juicy and crispy Chicken in a Homemade Biscuit is comfort food at its best.  For something green we will prepare Blistered and Sauced Asparagus, nutty and crave worthy.  We will whip up an Ultimate Chopped Salad, crammed full of goodies, so crunchy and topped with Homemade Blue Cheese Dressing.   Spicy shrimp Salad served on an avocado half is almost too pretty to eat. Chickpea Crostini, a simple go to that really delivers on flavor.  For a beautiful sweet finish we will prepare Fresh Orange Curd, Vanilla Bean Butter Cake and Chantilly Cream that will be transformed into a gorgeous trifle that is irresistible.  Class Fee $58.00

Practical’s are a new style of class I am offering that give you a true hands on cooking experience and the best part you take home the results!  Macaroons, the quintessential French treat, light, delicate and irresistible! After studding macaron making in Paris, Lorie will lead a hands on class using tried and true French techniques. We will first toast the macaroon with a flute of bubbly before diving in to make this love at first bite treat.  Each step of the process will be clearly defined so students can replicate the process in their own kitchens with success!  We will prepare the classic French flavors; Vanilla Bean with Swiss buttercream filling, Raspberry filled with Raspberry Buttercream, and my personal favorite, Pistachio with a Pistachio Buttercream filling.  Recipes for other macaron flavors will be shared. Best of Chocolate Desserts

With Valentine’s day right around the corner, my mind always drifts to Chocolate. Chocolate is my passion food and it will show in this action packed chocolate rich class.  I will serve Limoncello Martinis, the perfect complement to all this chocolate! The fun will start with a show stopping Chocolate Flower Cakes.  The cake will be baked like a ball, stuffed with goodness, large chocolate leaves will be crafted and attached and the finished product will resemble a chocolate rose.  Next up, Truffles a la Maison de Chocolate in France, rich and decadent no need to elaborate!  Chocolate Lava cake is always a crowd pleaser and mine will not disappoint!  Chocolate Pate is a simple and sinful dessert especially when served with butter cookies.  Raspberry Filling will be made from berries to stuff our dark chocolate bon bons, eating one is truly and experience.  We will prepare Chocolate Turtle Brownies to round out the chocolate feast.  Class Fee $58.00. Viennoiserie, the exquisite dough used in classic French Pastries including Croissant, Pain Chocolate and Almond Croissant will be learned.   After studding Viennoiserie at Le Cordon Bleu in Paris, Lorie will lead you in hands on instruction where you will learn to make this classic French dough.  We will toast the French with bubbly before we get started.  Viennoiserie is an art form but with Lorie’s straight forward techniques and ample hands on exposure, you will become an expert!  Buttery flaky croissants, Pain Chocolate stuffed with bricks of chocolate and luscious Almond Croissant filled with Almond Custard will be taught, tasted and packed up for take home! Fancy a Cocktail?

Are you ready for a fun night filled with inspired dishes and flavors?  This is the class for you!  In this class we will craft and taste 4 vodka cocktails.  Each cocktail will be paired with the perfect elegant morsel or two.  The fun starts with a savory favorite, Peppered and Herbed Popped Corn and juicy Texas style Chicken Cordon Bleu bites both make a lovely pair with Peach Jalapeno Martini.  Succulent Lobster Rolls and Gorgeous Roasted Red Pepper and Goat cheese Tart work well with light Lemon Fizz Cocktail.  Crunchy Apple Walnut Lettuce Wraps and Jalapeno Popovers with Honey Butter are the perfect combination with the classic Cosmos.  For a sweet finish we will have some fun crafting cake balls and tasting Pumpkin Martinis.  1-2 ounce servings of each cocktail will be served.  Class Fee $58.00. REGISTER HERE

Lunch and Learn Winner Winner Chicken Dinner!

Italian Cooking

Join me for an evening of Italian cooking.  We will immerse ourselves in the flavors of Italy as we enjoy a relaxed cooking experience starting with a garden fresh cocktail; Basitos are made with fresh lime and basil creating the perfect complement to our recipes.  Beautiful Chopped Salad featuring baby kale, fresh chevre, seeds and figs will be our delicious starting point.  Next up, we will prepare the perfect dreamy Tomato, Basil Risotto with Artichokes, a fantastic meal for simple entertaining.  Parmesan Garlic Bread leaves fill the house with an amazing aroma and will not disappoint.   Chicken Piccata with lemon, butter and capers, is a wonderful go to family favorite.  Spicy Italian Meatballs are a must for any Italian feast.  For a decadent pasta indulgence, I will unlock the mystery of Creamy Fettuccini Alfredo.  Our show stopping dessert is the beautiful Pana Cotta Strawberry Coulis.  Class FEE $58.00. 3 Day French Workshop-SOLD OUT

SOLD OUT! Looking to expand you cooking knowledge or just your recipe repertoire?  If so join me for 3 days of cooking fun that will do just that.  In French Food Workshop I you will travel the county of France as we prepare time honored classics.  Cooking techniques that can be applied to most any recipe will be taught as we prepare 3 meals each day.  We will cook and enjoy breakfast and lunch together and a single portion of the dinner offering will be packed home to enjoy in the evening hours.
Two of the five French mother sauces, Hollandaise and Veloute are included in this workshop, three timeless and irresistible desserts as well as French Bread and fresh churned European style butter.   We will make our own Herbs de Provence to be used in our recipes.  Class is limited to 10 participants.  Class Fee $232.00. DAY 1

Breakfast is the most important meal of the day and ours will be puffy golden brown Pain Perdue served with freshly made sweet Strawberry Jam.  Tomato Basil Soufflés will rise to amazing heights for lunch along with a Fall Salad made from the perfect combination of pears blue cheese and walnuts.  For dinner we will prepare rich and satisfying Daube de Boeuf Provencal a lovely hearty beef stew.  For dessert we will concoct dreamy Coconut Crème Brulee.

Day 2

We will start our day with the tasty simplicity of Cherry Clafouti.  For lunch we will learn to make the perfect Buckwheat Crepes and luscious Hollandaise Sauce; they come together to create Asparagus and Ham Crepes. We will head to the Basque region of France to concoct a dinner that is sure to become a favorite recipe.  Bell pepper, onions and tomatoes are slow cooked with chicken to become Poulet Basquaise.  For dessert Strawberry Jam will be used to fill sweet and crumbly Gateau Basque
 

Day 3

Breakfast will be extraordinary Soufflé Omelet with herbs and Gruyere cheese.  We will enjoy fresh baked French Bread and Churned Butter with lunch of my all-time favorite Coquilles Saint Jacques.  For Coquilles we will learn the second of our sauces, Veloute.  Dinner will be slow cooked, satisfying Cassoulet with Kielbasa Sausage and Bacon.  As a celebration of our last day together we will prepare and enjoy the gorgeous Apple Almandine Tart.

Lunch and Learn Dinner in a Minute!

Join me every month or just THIS month for Lunch and Learn, an extended lunch hour that gives you a full cooking class experience, a delicious lunch and an arsenal of new recipes to help you get dinner on the table at your house!  We will employ the strategy used in my house for years with great success, Cook Once Eat Twice!  The good eating begins with traditional Money Mustard Pork Loin served with Smashed Sweet Potatoes for a fast dinner fix.  Planned overs become Crispy sensational Cubano Paninis.   We will use succulent white fish and late summer vegetable to create a simple Papillote and planned overs become Fish Tacos with avocado and Spicy Aioli.  Chicken Cacciatore Bake is outstanding and provides the tasty toppings for Focaccia Bread Pizza.  We will do a main course salad featuring chewy satisfying Faro.  For a sweet finish, dense southern style Pound Cake topped with juicy Stone Fruit Compote and whipped cream topping.
